See how much you make on a pint of lager - how many measures of gin you sell in a week - how long the stock you have is going to last - how much you need to order on an average week. Because we deal with many different clients and suppliers, we keep up to date with the best prices, latest innovations, and new (and old!) ways of detecting and reducing pilferage. Most good stocktakers should be able to tell, certainly to within a gallon, how much is in a 10 / 11 gallon keg, just by lifting it.
That is if the keg is easily accessed!
The reality is that many cellars are jammed full, with kegs piled two high, the one in use often behind many other kegs. In that situation the old method is often impractical.
When you come to the larger 18, 22 or 36-gallon containers, often jammed in against a wall by others, it is virtually impossible to tell with any degree of accuracy how much is in the container without a Kegmiser or similar device. |
Nearly all cash registers are now capable of recording individual item (PLU) sales, and we can reconcile the recorded sales, adjusted to include things like pipe cleaning, wastage, complimentary drinks etc. against the calculated sales, showing over/short both by number and percentage for each separate stock line. This is a powerful tool against loss or pilferage. Different prices in different bars? - No problem. Where other stocktakers may just average the price, we have a specially developed programme to accurately show and account for different prices.
One awkward area, which is often glossed over, is post-mix soft drink sales, given the various different ways it is sold and used. In our programme a separate sheet allows individually tailored calculation and reconciliation before the figures are transferred to the main summary. (Usually, given the high margin, these figures can considerably distort the overall report)
Another area that can distort profit margins is free of charge (FOC) stock. Again, we produce a separate sheet for this, to calculate the value of free stock separate from each group to give a much more accurate picture.
Any time there is a tax change or price increase, we can produce a sheet to show the effect on your profit margin, and recommend new bar prices to maintain returns.
